Zushi is a cooking way rice flavoured with vinegar and with a filling or coverage of raw fish or shellfish, vegetables or eggs. It´s ideal as snack taste but also as entry or main dish. The zushi besides being an artistics form and exquisite cuisine, is healthy. Zushi food usually is cooked in China although the most famous come from the Japanese culture. The zushi was a cultural import that Japanese Buddhist monks brought to china on sVII d. C. after their studies. Somewhat later, in early s.XIII japannes started to keep in rice the fish which was sent to Kyoto as payment of taxes. This was called primitive Zushi Nara, means “preserved fish and fish fermented rice and salt.” Towards this early preparation was different to the zushi as we know it today, it will not be until sXIX to be established in Edo what´s called Nigiri Zushi or molded by hand, the first japan fast food. The Niguiri Zushi, as the zushi as we know, is easy cooking and bearing, so becomes a perfect meal to have a snack mid-morning or afternoon. Not only delicious, also it´s very healthy.
